CACAO CHIA SEED ENERGY BALLS
RECIPE
Ingredients
1 1/2 cup pitted dates
1/3 cup unsweetened cacao powder
1/3 cup whole chia seeds
1/2 teaspoon vanilla extract
1/4 teaspoon almond extract
1 cup slivered almonds
Instructions
1. Puree dates in food processor until a thick sticky paste forms.
2. Add cacao powder, chia seeds, vanilla extract & almond extract. Process until well combined. 
3. Add almonds and blend until well chopped and distributed. 
4. Transfer mixture to wax paper and mold into a rectangle or press into a loaf pan to easily create a rectangular shape OR roll into balls. 
5. Wrap in wax paper and refrigerate overnight. 
6. Remove from fridge and cut into bars. Wrap bars individually for storage. 
7. This recipe is extremely simple and the results are great, if not better than store-bought bars!

THEY ARE SWEET, CRUNCHY AND NUTRIENT DENSE - THE PERFECT SNACK!

At the end of our Rancan Sisters Fitness 14km Trail Run Challenge we gave everyone a sample of this recipe.  A healthy post race snack. 

For those who like to have a 'treat' mid morning or afternoon whip up a batch of Cacao Chia Seed Energy Balls.
