CASHEW, LIME AND DATE BALLS

Cashew, Lime and Date Balls are a great dairy and gluten free snack.
No processed sugar. The perfect snack to replace your chocolate addiction.
Freeze them or keep them in the fridge.
PREP TIME 5 minutes
MAKES 16 Balls 40 minutes
INGREDIENTS
1 Cup Raw Cashews
1 Cup Desiccated Coconut
1 Lime Juice and Zested
2 Tablespoons Maple Syrup
1 Cup Medjool Dates Pitted
1 Teaspoon Vanilla Extract
1 Pinch Salt
Extra coconut to roll balls in
THERMOMIX INSTRUCTIONS
- Place all ingredients in TM bowl and blend 20 sec/Speed 8. Scrape down sides and repeat until well combined. Make sure the mixture is not too wet. Save the lime juice until you need extra liquid to combine. Roll into tablespoon sized balls or weigh 30g each ball. Sprinkle extra coconut on a plate and roll each ball in to coat, then place on a tray in the fridge to set.
BLENDER INSTRUCTIONS as above, scrape down until blended.
