Healthy Breakfast Cookie Recipe
We love this recipe because it does not include butter or refined sugar.  Lots of fibre to keep you going and nothing beats a homemade cookie!
Perfect quick breakfast, mid morning snack or lunchbox treat.  

Ingredients

4 Cups Bran Flakes Crushed - we used All Bran Bran Flakes
3 Cups Oats
2 tblsp Wheat Germ
1 1/2 tblsp Cinnamon
1/2 Cup Plain Yoghurt
1 Cup Unsweetened Applesauce - Apple Puree
1 tsp Vanilla
1/3 Cup Honey
1 Egg, beaten
1/4 Cup Skim Milk Powder
1 tsp Baking Powder
1 tsp Bi Carbonate Soda
1/2 Cup Raisins

Directions

1. Preheat oven to 180 degrees C
2. Crush Bran Flakes - easy to crush in a food processor.  Add oatmeal, wheatgerm and cinnamon then set aside.
3. In a medium bowl, combine yoghurt, apple puree, vanilla, honey, beaten egg and skim milk powder and mix well to combine. 
4. Add baking soda and baking powder to the yoghurt mixture and mix well. 
5. Gradually add the crushed bran flakes and oatmeal mixture to the yoghurt mixture and stir well. 
6. Add raisins and mix to combine. 
7. Scoop heaped tablespoons of the cookie batter and roll into a ball shape.  Place onto baking paper lined cookie tin and slightly flatten. 
8. Bake at 180 C for 15 - 18 minutes.  Makes 24 cookies.
