5 INGREDIENTS PEANUT BUTTER AND BANANA ENERGY BARS

This homemade oat, peanut butter and banana energy bar recipe has only 5 ingredients and they’re high in protein, healthy carbs and fibre. 

PREP TIME 10 minutes

COOK TIME 30 minutes

TOTAL TIME 40 minutes 

20cm x 20cm Baking Pan lined with baking paper

Pre-heat oven to 180 degrees C

INGREDIENTS 

3 Very Ripe Bananas

1 Cup Peanut Butter

1/4 Cup Honey

1 Teaspoon Cinnamon (optional)

1 Teaspoon Vanilla Extract (optional)

2 Cups Rolled Oats

1 Cup Sliced Almonds or other nut/seed combination

INSTRUCTIONS 

  1. Using a hand or standing mixer, mix the bananas, peanut butter, honey, cinnamon, vanilla until very smooth.
  2. Add oats and almonds until combined.
  3. Turn out into baking tray.
  4. Bake for 30 minutes or until golden brown on edges.
  5. Allow to cool before cutting into bars.
  6. Store at room temp for up to one week or freeze for up to 6 months in airtight container.

VARIATIONS - Add chocolate chips, nut free version use sunflower seed butter instead of peanut butter, pumpkin or sunflower seeds instead of almonds.
